Electrical impedance of food sensor recorded during ammonia evaporation

This data represents a measurement conducted using an impedance analyzer connected to our spoilage sensor, which was described in detail in our previously published paper: https://www.nature.com/articles/s43016-023-00750-9 The data includes four plots: resistance, capacitance, real and imaginary impedance Data includes measurements from a drop of ammonia in liquid form in a petri dish placed next to our food spoil sensor. As the ammonia evaporates, sensor response changes. The ammonia test is a way to mimic the protein-rich food spoilage process. 1 st column is the time (in mins) and second column is the measured value.
