Results from a two-year field study in which rice was grown in the same soil and subjected to different water managments ranging from traditional flooded to non-flooded. We monitored concentrations of As, mercury (Hg), and Cd in rice grain as well as CH4 emissions and other measures of soil and water chemistry. We show that CH4 emissions and grain concentrations of inorganic and organic As and Hg follow the same trends of decreasing with less soil flooding, whereas grain Cd concentrations increased to above the Codex limit for the driest conditions.Data set includes soil porewater chemistry, soil redox potential, plant concentrations of Cd and species of As and Hg in rice grain and plant and root levels of Cd, As, and plant nutrients, as well as Fe plaque concentrations and mineral composition.
