RQ3-1-7 is derived from traditional air-dried mutton products in WulateZhongqi pastoral area of Inner Mongolia. This strain is mainly used in the fermentation of meat products, which can promote the release of free fatty acids, improve the composition pattern of fatty acids in products, and significantly increase the content of aldehydes, esters and heterocyclic substances with low flavor threshold. It significantly improves the nutritional and sensory quality of the product, and provides a theoretical basis for the development and application of lactic acid bacteria starting culture.
