Aging mechanisms of bamboo shoots under ambient conditions on Dendrocalamus brandisii

Dendrocalamus brandisii (Munro) Kurz is a typical large-scale sympodial bamboo, widely distributed in the western and southwestern regions of Yunnan Province, China. The quality of its fresh bamboo shoots is excellent, and it is the key development of bamboo shoots in Yunnan Province. Gene expression changes in bamboo shoots at different time points under ambient storage conditions were investigated, and we aimed to reveal the he rules of bamboo shoot aging under ambient conditions.
