The dataset contains the data for obtaining the ideal conditions for ultrasonic treatment (US) on an orange by-product mixture, rich in fruit pulp (PU80), which was obtained from the juice extraction process. Property improvements were assessed by measuring water and oil holding capacity (WHC/OHC), bile acid adsorption capacity (BAC) and particle size. These data are marked as ‘Part 1’ (P1). After selecting conditions, US was applied on mixtures comprised of varying proportions of pulp and peel, e.g. PU80 (80% pulp, 20% peel), PU50 (equal proportions), PU20 (20% pulp, 80% peel), as ‘Part 2’ (P2). Therein, data was collected from the determination of several dietary fiber properties for all mixtures, including the properties measured in P1 as well as antioxidant and further health-promoting characteristics. The results showed that powder mixtures with varying amounts of orange pulp and peel displayed distinct properties and responded differently to US. Mixtures with a higher proportion of orange pulp (PU80, PU50) exhibited great improvements in techno-functional and health-related properties after US, except for BAC and total phenolic content (TPC). In contrast, PU20, which contained the highest amount of orange peel, had larger particle size and greater resistance to US energy but demonstrated higher TPC after treatment, resulting in increased BAC.
