The stevia residue was fermented for 15 days under the following conditions: solid-liquid ratio 75.6%, brown sugar dosage 2.7%, temperature 25 °C, and inoculation rate 3%. Three samples were randomly collected on days 0, 3, 6, 9, 12, and 15 for 16S and 18S rRNA gene sequencing. This is the raw sequencing data obtained after sequencing.In the sample name TY0-1, the number 0 indicates the 0th day of fermentation, and 1 represents the first randomly selected replicate. The naming rules for the other samples are identical.
