MetaPDOcheese 2: Internal transcribed spacer (ITS) region-based metabarcoding analysis of the French PDO cheeses and milks

The dataset represents a national-scale metagenetic survey composed of 2684 samples (n = 1148 rind cheese, n = 1148 core cheese and n = 388 milk samples) encompassing the 44 PDO cheeses present across France and belonging to 7 different cheese making technologies (hard cooked cheese, soft washed rind, uncooked pressed cheese/semihard cheese, lactic washed rind, lactic bloomy rind, internal blue mold and soft bloomy rind). The total fungal DNA was sequenced using Illumina NovaSeq6000 after amplifying of fungal ribosomal internal transcribed spacer (ITS2) region 2 (2x250 bp).
