The analysis comprises three stages of the production process: aguamiel (A; Agave sap), pulque starter (PS; fermentation starter), and pulque joven (PY; final product). The samples were taken from two different Agave species (A. salmiana and A. mapisaga), three different pulque producers distributed in three different locations, and sampling took place through summer 2023 in a producing region of the Mexican State of Queretaro.
