Mango fruit Mangifera indica L. cv. Shelly was harvested in July 2019 and Keitt cultivar fruit in August 2018. The fruit was transported (2 hours) to the Agricultural Research Organization, Volcani Center, Israel. The fruit was washed with tap water and air-dried. Phe treatment was by dipping the mango fruits in 8 mM of Phe dissolved in tap water neutral pH for 30 s, and for controls dipping in water, and stored at 22 Celsius for 48 h. The control and treated mango fruits were stored at 7 Celsius or 10 Celsius for 3 weeks in the cold-storage rooms. Each treatment consisted of 6 cardboard boxes with 12 fruits for Shelly and 9 for Keitt in each box. After CS, the fruit was stored at 22 Celsius for 7 days to mimic shelf life. The cold-storage room temperature was monitored by a DAQ tool double-strand wire logger/data acquisition control system.
