We had improved Streptococcus thermophilus in its Bata galactosidase production capacity using classical mutagenesis to generate ST30-8, which will applied and solve the problems associated with lactose hydrolysis and added sweeteners in yoghurt fermentation processes. This strain would be used as whole cell catalyst to hydrolyze lactose and increase the sweetness of the product and remove the use of purified lactase and reduce the cost of yogurt production.
