Here, we share raw and processed data as excel and jpg files on digestibility studies, polyphenolic release through in vitro digestion, FTIR, XRD, SEM, NMR, DSC, syneresis, texture and metabolic composition of a range of starch gel samples and camu camu fruit extracts. This data demonstrates how the digestibility and multi-scale structure of neat starch and starch composite gel matrixes is affected by inclusion and non-inclusion complexation immediately after gel formation and over refrigerated storage.
