This work is composed by two parties in which we try to make a global exam covering the whole period between XVII and XXI century. In first part , concerning XVII-XIX century, we'll focus on figure of the monk Fra Giuseppe Desa, in a period starting from his native city until his beatification. Wele covered by this man for local citizens which leaded, at last, to the statement of figure of town patron saint. In second part we have a coincise historical itinerary about wine manifacturing in XIX-XX century. We'll analyze the wine production starting from a small and autharchic model arriving to the actual growing international trading of excellent products. This important commercial goal was realized only in late Twentieth Century when the Salento's wine-must was yearned for mixing northern wines, poors of sugar in must. This co-operation choiche, which in long period turn out succesful, takes advantage of the name of the saint, even in both wine coperatives.
