Daqu, a liquor starter, provides abundant microorganisms and enzymes for saccharification and fermentation in baijiu making. According to difference of highest temperature in culture, daqu can be divided into jiangxiangxing daqu and nongxiangxing daqu. Various microbial community in daqu may perform diverse genomic function.
