Protein, Phytate and Minerals in Grains of Commercial Cowpea Genotypes

Abstract The objective of this study was to investigate and characterize cowpea (Vigna unguiculata) genotypes for total grain protein content, storage protein fractions (globulin, albumin, prolamin, basic and acid glutelins), and phytate and minerals contents.
