The effect of CO2 on bacterial communities of carbonated raw milk was examined by pyrosequencing and Illumina sequencing of 16S rRNA gene amplicons. A total of five samples from sites with different scales of operation located in two different states in Australia were analysed: DP1 and DP2 were collected from two large scale dairy processing plants, MF from a medium-sized farm, and SF1 and SF2 from two small farms.
