Our research group studies bacteria of the genus Enterococcus isolated from naturally ripened Mexican cheeses, namely Cotija cheese. Since this genus can also be found in hospital settings, where the presence of highly virulent and multi-drug-resistant strains is favored, we carry out comparative genomic studies in order to assess the differences between these strains and food-related ones (such as Enterococcus faecium QD-2). In addition, we also explore the biotechnological potential of food-related strains, studying their capacity to produce antimicrobial peptides (bacteriocins).
