Lactobacillus fermentum IMDO 130101 is a strain of L. fermentum isolated from a backslopped laboratory sourdough. Its genome was sequenced and annotated to investigate the strain's adaptations to the sourdough environment and its metabolic potential at gene level and, hence, underline its importance as sourdough starter culture.
