Plant protein adsorption at oil-water interfaces: Collection of literature interfacial pressure data

Collection of literature data on plant protein adsorption at oil-water interfaces. Compiled interfacial pressure data for pea, soy, chickpea, lentil, faba bean, wheat, and microalgae proteins with information on used protein fraction, concentration, and measuring conditions (pH, ionic strength). Special focus on the used oil subphase and initial and final interfacial tension data for combined plotting by alternate subphase tensiometry (AST).
