Assess the nutritional, environmental, and economic profiles of 3,302 Chinese recipes

This dataset provides an assessment of the nutritional, environmental, and economic dimensions of 3,302 representative Chinese recipes spanning six major regional cuisines (Lu, Su, Zhe, Min, Xiang, and Hui). The recipes were collected from culinary publications, online platforms, and field surveys, and standardized through a pipeline that combined large language model-based information extraction, ingredient name verification, and quantitative conversion of ambiguous units into gram weights. The dataset includes three integrated outputs: (i) nutritional content, (ii) environmental footprints, and (iii) price results, alongside a reference file documenting the units and definitions of all indicators.
