Low-Field NMR of Four Gadoid Fish Species

When an instrument measures only a small part of a food product, the result may not fully represent the whole sample. In fish muscle, composition can vary between locations within the same fish. These repeated measurements support research into how that sampling variation affects estimates of water content and water-holding capacity. Low-field nuclear magnetic resonance (LF-NMR) follows how water-related signals decay in muscle. The resulting relaxation profiles provide information about water mobility and tissue structure. Water-holding capacity describes how well the muscle retains water. The collection covers 51 fish: 12 whiting, 12 haddock, 12 saithe, and 15 cod. CMA4_nmr.mat contains 908 muscle measurements divided into four matrices: whiting: 209 measurements × 256 relaxation values; haddock: 215 measurements × 256 relaxation values; saithe: 214 measurements × 256 relaxation values; cod: 270 measurements × 256 relaxation values. The corresponding whiting_no, haddock_no, saithe_no, and cod_no vectors link measurements to individual fish. water and whc provide one water-content and water-holding-capacity reference value for each of the 51 fish. The data support studies of variation within biological samples, measurement and sampling error, replicated calibration, and prediction of water-related properties from LF-NMR profiles.
