Dataset for: Dispersion of oil into water using lecithin-Tween 80 blends: The role of spontaneous emulsification

​​​​This dataset contains (a) Cryo-SEM images of interfaces between seawater and crude oil treated with lecithin-Tween 80 marine oil dispersant, showing spontaneous emulsification at those interface; (b) X-ray electron dispersion spectroscopy data mapping the elemental composition of the cryo-SEM images; (c) light microscopy images of interfaces between seawater and crude oil treated with lecithin-Tween 80 marine oil dispersant, showing spontaneous emulsification at those interfaces; and (d) images of pendant drops in seawater of crude oil treated with lecithin-Tween 80 marine oil dispersant being subjected to droplet coalescence tests.
