Transforming subgrade coffee beans into inovation products offers a practical approach to reducing waste while increasing economic value. However, no comprehensive risk management analysis has been conducted for such product innovation. This study addresses the issue by applying an integrated FMEA–DEA–FANP framework to identify, evaluate, and prioritize risks in the development of Chocoball, a snack made from subgrade coffee. The analysis identified 21 risks as DMU. 18 DMUs exhibited TE values below 1, indicating inefficiencies that require managerial attention. Based on the results, mitigation strategy focused on the top 30% of prioritized risks. FANP analysis revealed that managerial empowerment and organizational communication were the most influential strategies, indicating MSMEs’ shift toward adaptive and learning-oriented structures.
