Genome sequencing of Saccharomyces cerevisiae strains KA31a and a924E1 in relation to piezosensitivity

This project provides the genome sequences of two strains of Saccharomyces cerevisiae: KA31a and its pressure-sensitive (piezosensitive) mutant, a924E1. The a924E1 mutant, which was derived from KA31a via UV mutagenesis, exhibits high sensitivity to high hydrostatic pressure. The objective of comparing the genomes of these strains is to identify the genetic differences responsible for pressure tolerance and/or sensitivity. This analysis will contribute to the development of yeast strains suitable for high-pressure processed draft cloudy sake production.
