Dataset of complex electrical impedance of an emulsion in a water column

Dataset is obtained from experiments carried out in a laboratory where measured the Electrical Impedance (EI) of a mixture of water and air bubbles in a water column. Air is injected through the base of the column through an air stone, and its flow rate depends on the voltage applied to a peristaltic pump. Around the column, in a horizontal plane, eight equidistant electrodes have been placed to carry out the mentioned EI measurements. These EI data of a heterogeneous mix contain information related to the water/air ratio and can be processed to quantify that ratio using techniques such as Machine Learning, image reconstruction and processing. With this quantification, could be developed applications in the oil, pharmaceutical and food industries, and the design of new measurement systems for commercial exploitation.
