Whole-metagenome sequencing of student-propagated water kefir samples

To investigate the compositional diversity of water kefir microbial communities, we extracted and sequenced DNA from various water kefir samples propagated by different students in their households. This study aims to provide insights into the microbial ecology of water kefir, exploring strain-level variation, accessory genome content, and the potential influence of environmental factors such as household conditions and fermentation practices.
