该数据集包括膨腹海马的酶解工艺、多肽含量与抗氧化活性相关数据。该研究以DPPH自由基清除率为指标,从风味蛋白酶、碱性蛋白酶、胰酶、胃蛋白酶、木瓜蛋白酶、胰蛋白酶六种酶中筛选出最佳酶进行工艺优化。以酶解时间,pH值,酶与底物比例进行单因素实验,使用Design Expert13软件,通过Box-Behnken中心复合设计数学模型,采用响应曲面分析筛选出最佳酶解工艺,并进行工艺优化验证。结果表明,海马多肽DPPH自由基清除率为48.98 %,具有一定的抗氧化活性。该数据集可为膨腹海马多肽的开发和利用提供数据支持。
This dataset contains data related to the enzymatic hydrolysis process, polypeptide content and antioxidant activity of Hippocampus abdominalis. In this study, taking DPPH radical scavenging rate as the evaluation index, the optimal enzyme was screened from six enzymes including Flavourzyme, Alkaline protease, Pancreatin, Pepsin, Papain and Trypsin for process optimization. Single-factor experiments were conducted with enzymatic hydrolysis time, pH value and enzyme-to-substrate ratio as the investigated factors. The optimal enzymatic hydrolysis process was screened and validated for optimization via response surface analysis based on the Box-Behnken central composite design mathematical model using Design-Expert 13 software. The results showed that the DPPH radical scavenging rate of polypeptides from Hippocampus abdominalis reached 48.98%, demonstrating certain antioxidant activity. This dataset can provide reliable data support for the development and utilization of polypeptides derived from Hippocampus abdominalis.
