Oncom is a peanut press cake fermented food originated from Indonesia. Oncom fermentation involves other microbial contribution other than molds as the main inoculum. The goals of this study are to assess microbial diversity and the function of those microbes in oncom fermentation. This study will understand on how microbes work together in oncom fermentation process.
