Assessment of the exposure to cytotoxic Bacillus cereus group genotypes through HTST milk consumptionCytotoxic Bacillus cereus group strains are common causes of foodborne illness. This study modeled the growth of cytotoxic B. cereus group strains in HTST milk along a supply chain and developed an exposure assessment model that can predict the cytotoxic B. cereus group concentrations at the point of human consumption. This model represents a tool that can help the industry assess likely human exposure to cytotoxic B. cereus group strains if HTST milk is found to be contaminated with a given B. cereus group genotype at a given level, thus facilitating food safety management decisions.
