Description: Malting-quality screening of 25 named sorghum cultivars micro-malted at the USDA-ARS Cereal Crops Research Unit (Madison, Wisconsin) under a documented bench schedule, each analyzed at three- and four-day germination (50 analytical rows). Measures: fine extract (% d.b.), diastatic power (ASBC), alpha-amylase (DU), FAN, soluble and total protein, S/T, wort clarity, wort color, and moisture. Enzyme assays were run on 4x-concentrated extracts per the program's sorghum adaptation.
