Daqu is the starter of the fermentation of Chinese liquor, which supply various yeast and bacteria during the fermentation. In general, Daqu should be stored for about three to six months before use. In this study, Daqu samples were collected when storing for one to six months. Prokaryotic communities in Daqu were studied via 16S V4 sequencing. The goal of this study was to investigate the the succession of prokaryotic communities in Daqu during storing.
