酸价(以KOH计),又称酸值,主要反映食品中的油脂酸败程度。酸价超标会导致食品有哈喇味。《食品安全国家标准 坚果与籽类食品》(GB 19300—2014)中规定,炒货食品及坚果制品中酸价(以脂肪计)的最大限量值为3mg/g。超标严重时所产生的醛、酮、酸会破坏脂溶性维生素,导致肠胃不适。 炒货食品及坚果制品酸价检测数据,为政府部门监管提供依据,避免因酸价超标而产生食品安全问题,进一步保障消费者的食品安全。1.数据采集:采集样品编号、检验数量、样品名称、项目、方法、最大限定值、报告值、单位等信息;2.数据处理:(1)是否超出标准值,报告值为未检出、报告值小于最大限定值的为未超出,反之为超出,具体使用IF、OR的函数;(2)炒货食品及坚果制品酸价监测总数:为数据统计范围内总检验数量;(3)炒货食品及坚果制品酸价超标检出问题项次数:通过SUMIF函数将超出标准值的检验数量求和;(4)炒货食品及坚果制品酸价超标问题发现率=炒货食品及坚果制品酸价超标检出问题项次数/炒货食品及坚果制品酸价监测总数*100%。

Acid value (calculated as KOH), also known as acid number, mainly reflects the degree of lipid rancidity in food. Excessive acid value will cause food to have a rancid taste. The National Food Safety Standard for Nuts and Seed Foods (GB 19300—2014) stipulates that the maximum limit for acid value (calculated as fat) in roasted seed foods and nut products is 3 mg/g. Severe exceeding of the limit will produce aldehydes, ketones and acids that destroy fat-soluble vitamins and cause gastrointestinal discomfort. The acid value detection data of roasted seed foods and nut products provides a basis for government supervision, avoids food safety problems caused by excessive acid value, and further protects consumers' food safety. 1. Data collection: Collect information such as sample number, number of tests, sample name, test item, test method, maximum limit value, reported value, and unit; 2. Data processing: (1) Determine whether the value exceeds the standard limit: if the reported value is "not detected" or less than the maximum limit value, it is deemed as not exceeding the limit; otherwise, it is deemed as exceeding the limit. The IF and OR functions are specifically used for this judgment; (2) Total number of acid value monitoring samples for roasted seed foods and nut products: the total number of tested samples within the data statistics scope; (3) Number of detected non-compliant items for excessive acid value in roasted seed foods and nut products: sum the number of tests that exceed the standard limit using the SUMIF function; (4) Detection rate of excessive acid value in roasted seed foods and nut products = (Number of detected non-compliant items for excessive acid value / Total number of acid value monitoring samples for roasted seed foods and nut products) * 100%.
