The present study analyzed the influence of storage conditions on hydrogen and methane production by native bacteria from wine effluents stored under refrigeration conditions at four degrees Celsius for 5 weeks and ambient conditions for 7 weeks. The study included white wine (WW), pink wine (PW), red wine (RW), and a wine blend (WB). Ultimately, it was found that time significantly affected substrate, as during the initial 5 weeks, there were no significant differences in hydrogen production. However, the optimal time for production was observed at week 24.
