Shotgun metagenomics and viral metagenomics of fermented vegetables

The microbial and viral communities of 12 fermented vegetables were analyzed using shotgun and viral metagenomics approaches. The viral metagenomics approach involved DNA and RNA amplification to access dsDNA, ssDNA, and RNA viruses. The results highlight fermented vegetables' complex microbial and viral composition, which vary depending on the type of vegetable used as raw material.
