Composite bread seeks to replace part of the wheat flour with non-wheat flours in bread making. This is important for countries that do not produce wheat to produce comparable quality products while reducing dependence on imported wheat. This has become even so important in the face of Covid-19 restrictions which closed borders and disrupted international supply chains. However, finding suitable replacements for wheat flour has proven to be difficult. Thus, the need for research to identify suitable replacements of wheat flour, as well as optimal processing conditions.
