Dataset supporting the publication "Water-in-oil microstructures formed by marine oil dispersants in a model crude oil"

This dataset contains (a) measured interfacial tensions at the interfaces between bulk seawater and a model crude oil containing 0.5wt% seawater and 2 wt% mixtures of the surfactants Tween 80, Span 80, and dioctyl sodium sulfosuccinate (DOSS); (b) micrographs, obtained using cryogenic transmission electron microscopy, of these same surfactant-oil-seawater-mixtures; (c) unprocessed dynamic light scattering (DLS) autocorrelation data obtained from these same surfactant-oil-seawater-mixtures; and (d) z-average particle diameters and polydispersities calculated from this raw autocorrelation data for these same surfactant-oil-seawater mixtures, as described in the publication supported by this dataset. This dataset supports the publication.
