This study examined 107 <i>Lactiplantibacillus plantarum</i> strains from naturally fermented dairy products, fermented grape must, and naturally fermented vegetables to compare for their cholesterol-lowering-related characteristics, including acid resistance, bile tolerance, surface hydrophobicity and bile acids deconjugation ability. It was found that the strains isolated from different habitats differ significantly in the characteristics listed above.
