Dataset for "Comprehensive Analysis of Roasting-Induced Pyrazines in wx ae Brown Rice Revealed by GC×GC–TOF-MS"

This dataset contains raw and processed GC×GC–TOF-MS data used in the study “Comprehensive Analysis of Roasting-Induced Pyrazines in wx ae Brown Rice Revealed by GC×GC–TOF-MS.” The repository includes (i) raw chromatographic files in LECO proprietary format, (ii) a complete peak table containing retention times, quantifier ions, and relative peak areas, and(iii) sample metadata. These files provide transparency and enable reproducibility of the volatile profiling performed on roasted and unroasted WT and wx ae brown rice samples.
