Alicyclobacillus hesperidum DSM 12766 was isolated from solfataric soil. DSM 12766 does not produce guaiacol, which is of interest from the viewpoint of food spoilage in food microbiology. However, guaiacol production activity of A. hesperidum varies depending on the strain. This project data was collected for taxonomical and food microbiological studies of A. hesperidum.
