Telomere-to-telomere finished genome assemblies of Chinese Baijiu-brewing sorghum

Sorghum used for brewing baijiu, a unique and traditional distilled liquor, has a long history in China. Chinese baijiu-brewing sorghums are usually waxy and tannin-containing, and exhibit distinct phynotypes from the reference genome inbred BTx623. We know little about the genome of these Chinese cultivar, and telomere to telomere (T2T) sorghum genome is urgently needed. This project finished two complete T2T genome assemblies of the representative Chinese baijiu-brewing sorghum cultivar Hongyingzi for Moutai liquor from Guizhou and Huandiaonuo for local Baijiu from Zhejiang, using ultra-long ONT, HiFi and HiC reads.
