In this study, oil-in-water nanoemulsion of Eucommia ulmoides seed oil were produced by dynamic high-pressure microfluidization (DHPM). The nanoemulsion produced with DHPM at pressure of 100Mpa, treated for five times (5 min), Eucommia ulmoides seed oil volume fraction 8%, emulsifier concentration 0.12 g/mL demonstrated the smallest particle sizes, narrowest PSD and highest ζ-potential. The results of rheological properties indicated that the Eucommia ulmoides seed oil nanoemulsion prepared by DHPM has good kinetic stability. The physical stability analysis showed that no precipitation, fat floating and polymerization appeared in the newly prepared nanoemulsion. Additionally, nanoemulsion showed good stability under acidic conditions.
