Untargeted metabolomic profiling reveals matrix-dependent metabolic responses in cow and goat milk fermented with Lactobacillus plantarum strain SS — supporting data

This dataset contains the processed metabolomic data and statistical analysis outputs supporting the manuscript "Matrix-dependent metabolic responses in cow and goat milk fermented with Lactobacillus plantarum strain SS" (submitted to the Brazilian Journal of Food Technology). Fermented milk samples (cow milk and goat milk, each in biological triplicate) inoculated with the indigenous kefir isolate Lactobacillus plantarum strain SS were profiled by untargeted LC-HRMS metabolomics. The repository includes sample metadata, multivariate and univariate statistical outputs (PCA, PLS-DA, VIP scores, fold change, t-test results), and the corresponding figures.
