In this work we aimed the isolation and characterization of bacteriophages infecting Enterococcus faecalis, the main producer of tyramine in fermented foods, and Enterococcus faecium. The final objective is to study the use of these bacteriophages and proteins derived from them as a biotechnological tool to control the presence of Enterococcus faecalis and Enterococcus faecium cells in foods and reduce the production of tyramine, one of the most toxic biogenic amines found in foodstuffs.In addition, these phages could serve as a tool to eliminate the presence of Enterococcus cells in other situations, such as infections caused by VRE.
