From Food to Gut: Investigating the Fate of Neuroactive Compounds and Their Interaction with the Microbiome

This data is part of the study, called "From Food to Gut: Investigating the Fate of Neuroactive Compounds and Their Interaction with the Microbiome", that is currently under preparation. The study aims to address these knowledge gaps by combining in vitro gastrointestinal and colonic fermentation models with tomatoes as a food model. Using optimised advanced LC-MS/MS analytical methods, in vitro models, and an omics approach, the study investigates: · The impact of tomato digestion on colonic fermentation; · The effects of digestion and fermentation on 36 neuroactive compounds, including neuroprotective and neuro-disrupting compounds; · The influence of neuro-disrupting compounds on digestion and colonic fermentation; · The impact of neuroactive compounds on the modulation of the gut-microbiome.
