This study investigates the transcriptional responses of the traditional Greek apple variety 'Firiki' (Malus domestica Borkh.) during postharvest ripening and following the application of 1-methylcyclopropene (1-MCP), an ethylene perception inhibitor commonly used to delay fruit ripening. Using RNA sequencing (RNA-Seq) technology, we profiled the transcriptome of apple fruit samples under harvesting, control, and 1-MCP treated conditions. The dataset provides comprehensive insights into the molecular mechanisms underlying ethylene dependent and ethylene independent regulation of fruit ripening, including the modulation of genes involved in hormone signaling, cell wall remodeling, antioxidant defense, and secondary metabolite biosynthesis.
