Comparative study of microbial communities, biogenic amines and volatile profiles in the brewing process of rice wines with Hongqu and Xiaoqu as fermentation starters

Metagenomic sequencing technology was utilized for the analysis of the microbial community and functional genes in the fermentation process of Hongqu rice wine and Xiaoqu rice wine.
