Lactic acid bacteria are the dominating microorganisms in the sourdough ecosystem. They have been isolated from flour and grains, but their origin is uncertain. The aim of this project is to assess whether these bacteria enter the wheat plant in one or more phenological stages. For this purpose, wheat plants were sampled and the bacterial DNA extracted and used as a template in a high throughput sequencing analyses, using Firmicutes-specific primers.
