Effect of a polyphenol-rich plant matrix on colonic digestion and plasma antioxidant capacity in a porcine model

We used a pig model in a 2 × 2 cross-over trial to test diets with high- and low-fat contents supplemented with black carrots in raw dices and cooked puree forms to test bioaccessibility of polyphenols from the carrots. We monitored colonic fermentation, gut microbiome, plasma total antioxidant capacity (TAC) and atherogenic index (AI).
