For fresh prepared seasoned fish products, targeting the degradation of freshness and texture during storage, this dataset takes rainbow trout as the research object, analyzes the correlation between changes in fish electrical conductivity and traditional freshness evaluation indicators including rigor index, K-value, and texture, and establishes a non-destructive and rapid detection method for fish freshness.
