Valorised Polyphenols and Dietary Fibres from Common Bean Processing Wastewater: Functional Roles in the Gastrointestinal Tract

My thesis looks at how useful natural substances can be recovered from bean-processing waste instead of being thrown away. I studied compounds that may help slow sugar digestion and fibres that may support healthy gut bacteria. This research shows that bean-processing waste could be turned into valuable ingredients for health-related food products. Overall, the work helps find a better use for food waste while also exploring possible benefits for digestion and gut health.
