MN-BM-A02 has many good fermentation characteristics, but its most prominent is the ability to produce exopolysaccharides (EPSs). EPSs produced by LAB in fermented milk or yogurt improve the viscosity, body, texture, and taste of the final product. In addition, LAB-derived EPSs contribute to human health through their potential anti-tumor, anti-ulcer, immunomodulating, and cholesterol- lowering properties.
